Post Knock your socks off Guac!
One of our fall time favs is Gaucamole!!! Football season, birthday parties, it's good anytime!

6 avacados
1 lime
1 bunch cilantro (chopped - only the leaves)
1/2 cup red onion (chopped)
2 roma tomatoes (chopped)
1 cup shredded cheese (monterey jack, cheddar or colby)
2-3 serrano peppers (finely diced)
Garlic powder, salt

Remove the avacado from the peel (save 3 of the pits) and mush in a bowl with a couple dashes of garlic powder and a dash of salt. Add tomato, red onion, peppers and mix. Once mixed add in the cheese and cilantro - mix again. Squeeze the lime over and add the pits back in. Serve with tortilla chips - YUMMY! :biggrin:

Not sure if this is why Shelly does it but, someone told me that if you put the pit back in the quac it keeps it from browning. It also works if you keep it in the half of the avacado you dont use. :D

Yes, it slows the browning process. I guess the enzymes from the pits help keep it fresh... :biggrin:
